Lunch Was all About Green

Green salad with about 1/4 cup of capers. I just love capers. In addition I had 4 large green olives and about 3/4 cup of tabouli. Let's not forget 4 mini sweet bell peppers. The yellow and red ones. Yum! I could eat those all day! I love tabouli. Try this recipe for tabouli.




Tabouli

6 oz. bulgur wheat
1 c. water
3/4 c. lemon juice
6 med. tomatoes
1 1/2 c. chopped green onions
1 1/2 c. diced green pepper
3/4 c. parsley
3 tbsp. olive oil
1 1/2 tsp. salt
1/8 tsp. ground coriander
1/8 tsp. cumin
1/4 tsp. pepper
24 leaves Romaine lettuce


In large bowl combine bulgur wheat, water and lemon juice; cover and refrigerate until all liquid is absorbed, about one hour. Add remaining ingredients, except lettuce to wheat mixture and stir to combine; line serving dish with lettuce leaves and spoon tabouli over lettuce. Serves 6.

Cuban Seafood Stew

This great recipe I found on the Good Morning America website. Yum!

Ingredients

4 littleneck clams
4 scallops
4 shrimp, cleaned, size 16/20
6 mussels, in shell
¼ piece of fish (Licairac prefers salmon)
¾ cup tomato sauce
¾ cup fish stock
¼ cup white wine
¼ cup olive oil
2 pinches parsley, fresh, diced
½ tsp salt
½ tsp pepper
1½ tsp garlic, minced

Directions

 Saute clams in olive oil, fish stock and garlic until clams open. Add scallops.
 Add white wine.
 Add salt, pepper, and a pinch of parsley.
 Add tomato sauce.
 Add fish, mussels and shrimp.
 Stir until well-coated.
 Let simmer for six minutes.
 Heat butter and garlic in a separate pot until melted and spread on four pieces of toast.
 Garnish with a pinch of parsley and serve in a large bowl with four pieces of toast and a side of rice.

Trick Your Body Into Feeling Full

Americans spend $33 billion a year trying to lose weight, but even if they're successful dropping a few pounds, 95 percent will put it back on.

Now, the diet industry is pouring their research dollars into the science of satiety — which researches foods that naturally make you feel full.

Scientists are learning more about a hunger hormone called ghrelin. When you're hungry, this hormone is secreted in your stomach and intestines and sends a message to your brain to say it's time to eat.

Nicole Beland, a senior contributor at Women's Health magazine, says you can suppress ghrelin by eating certain foods, so you will then feel full. Carbohydrates and lean protein have been found to slow the production of ghrelin, while foods that are high in fat do not.

When you eat something that is high in protein, carbohydrates or fiber, after 20 minutes the food passes through your stomach to your lower intestines where other hormones are released that tell your brain it's time to stop eating. Then your stomach literally expands when you're full, which is called the gastric stretch, sending another signal to your brain that you are satisfied with your meal.

Which Foods Are Better?

While more still needs to be learned about why certain foods slow ghrelin, there are some guidelines you can follow. Beland offers this comparison of some basic foods to show which choices are more likely to leave you feeling full:

 Baked potato, mashed potato or French fries? Studies show that white potatoes are one of the most satisfying foods. The non-fried potato is the better choice because fries have a high fat content. The carbohydrates and fiber of white potatoes stay in your digestive system longer and leave you feeling more full than fat does.

 Juicy hamburger or lean steak? Lean steak because lean protein is the second best option for satisfying your hunger.

 Cod and flounder, or salmon and tuna? Stick with the white fish. In general, the lighter the color of the fish the less fat it contains and the more satisfied it will leave you at the end of the meal. White fish usually has one to two grams of fat per four ounces; pale-colored fish such as pink salmon, catfish and swordfish has three to six grams of fat per four ounces; and dark fish like mackerel, rainbow trout and red tuna range from eight to 16 grams of fat per four ounces.

 Cream of broccoli or lentil soup? Lentil soup, because beans are a great source of fiber and protein. Protein takes longer to digest than fat, and fiber adds a lot of bulk, which helps produce the gastric stretching that makes us feel like we can't eat another bite. Even the broth in lentil soup will satisfy more than the fatty cream base of cream of broccoli. While broccoli is also a good form of fiber, lentils beat it hands down.

Before you get started, there are a few other considerations to help those ghrelin-suppressing foods do their magic. For starters, remember to be patient. Wait 20 minutes after eating your first serving before deciding if you need a second helping or dessert. It takes time for food to start digesting and make it down into your lower intestine so you won't know if you're truly hungry until you've digested that first course.

It's also important to time your meals carefully. The ghrelin factor comes into play because the hormone will spike if you don't eat when you're accustomed to having a meal.

Space your meals evenly apart to help keep ghrelin levels from rising. If they're not spaced evenly apart, nudge them closer to that goal in 15-minute increments — so if you usually eat lunch at 12 and dinner at 7, eat lunch at 12:15 tomorrow, 12:30 the next day and so on until there's an equal amount of time between each meal.

What am I ? Chopped Chicken Liver?

Well, lunch today consisted of another trip to the deli at the organic food store.  I just love their food.  Everything tastes so good there.  I found a buffalo chicken wrap that I had not tried before.  It was great.  Lo carb and just enough spice.  Not too hot.  It was followed by 18 ounces of water and that sinful creme brulee.  I saw it and just had to get another one.  Man is it good.  So light,  like I did not really eat anything at all.  While I was there I saw some chopped chicken liver.  I got 1/2 pound of that.  I tasted a sample and it is heaven.  I am perhaps one of the few people that I know who loves chopped chicken liver.  It makes great sandwiches.  I love it on crackers too.  That will be dinner.  Chopped chicken liver, some veggies steamed, dried fruit and more water.         

Real Meat and Excersize!

Well last night I just could not eat another piece of fish.  I needed real meat.  I opted  for a burger.  I went to Fuddruckers and had the 1/3 pound three cheese burger with grilled mushrooms.  Can we say good!!! I drank about 3 glasses of water and felt very satisfied.  I ate dried fruit for dessert.  That will be it for awhile.  Back to chicken and fish. Today will be an excersize day of some sort.  I cannot decide if I want to break down and go to the gym or do one of my many excersize tapes.  And we will not  mention my stationary bike that really is my clotheshorse.  See prior post about that!  Or the cross country ski machine that is under the bed.  I had not pulled that out in awhile.  It used to be the clotheshorse in the bed room. 
 
Time is so fleeting.  30 minutes seems like an impossible block of time to somehow set aside for working out.  But I am.  The easier it gets as the more I do it.  Soon it will be part of the daily cycle.  Well, I have to go charge up the ipod. Got to have music to work out to!              

Food Choices!

I have not done too badly with food choices recently.  I have been eating lots of dried fruit and organic foods.  I have actually felt better.  Now last night my best friend came into town and we ate at Ruby Tuesday's.  (Certainly not organic.)  I had the ribs with potatoes and broccolli.  It was good but the portions were too big.  I only ate about a third of my food. I had not seen her in about 2 years or so.  She looked the same but I was changed.  I had always been thin but now I am not.  She told me she joined Curves about six months ago and has been religiously drinking her water and can tell a difference.  She said she has lost about 19 pounds.  She has never seen me other than thin so I was fearful of her seeing me now.  But I guess she is my friend regardless. I tried to put that fear out of my mind and it finally went away. 
 
Has anyone tried Fuze?  They are a collection of teas, juice blends and refreshers that I have only seen at the organic food stores.  They cost about $2.39 a bottle for something about the size of a large coke or just a little bigger.  It is worth it.  I feel better when I drink them. They have 90 calories.  Today when I went to the Fresh Market, Fuze was actually on sale!  Can we say YEAH!!!!!  For $1.00.  All the really good choices were gone.  There were a lot of diet Fuze left.  But I did  get a flavor I had not tried before.   It was Banana Colada.  It takes just like a pina colada without the alcohol.  Yum! 
 
I must confess I had a little bit of a backslide.  I saw creme brulee in the dessert cooler and just had to get some.  It was small.  About 1/3 cup worth.  It was heaven on a spoon.  I wonder how many calories was in that?  For dinner I bought some more dried fruit.  I guess I will eat that.  I am debating if I really want to go out and get a dinner.  I have a hankering for steak from Long Horns.  They have the best steak.  After those ribs I felt bloated.  I had not had any real meat in about two weeks.  I had had alot of beans and fish and hummus. 
 
Hummus.  There is nothing better in this world than hummus.  I love it.  That can be a whole meal for me.  Hummus on crackers or a hummus sandwich.  Hummus.  Hummus. Hummus.  Food.  Such a quandry!  I feel lighter.  All those veggies, hummus and organic foods.  It can get a little boring but I do want to be able to get into a swimsuit of my choice this summer.  And not the one I have had for the past 2 years.

Girl Scount Cookies!



OHMMMM! Coooookies! The girlscout cookies have arrived and I was unable to resist the temptation. 4 boxes. Just 4. I bought 4 boxes. Always the same every year. 2 boxes of thin mints and 2 boxes of samoas. How many is a serving. I know it is less than 5. Thanks god those cookies will be gone soon! I am way off track because of those cookies.

Water and It's Benefits!


Drink up!

Incredible as it may seem, water is quite possibly the single

most important catalyst in losing weight and keeping it off.

Although most of us take for granted, water may be the only

true "magic potion" for permanent weight loss.

Water suppresses the appetite naturally and helps the body

metabolize stored fat. Studies have shown that a decrease in

water intake will cause fat deposits to increase, while an

increase in water intake can actually reduce fat deposits.

Here's why: The kidneys can't function properly without enough

water. When they don't work to capacity, some of their load is

dumped onto the liver. One of the liver's primary functions is

to metabolize stored fat into usable energy for the body. But

if the liver has to do some of the kidney's work it can't

operate at full throttle. As a result, it metabolizes less fat

more fat remains stored in the body and weight loss stops.

Drinking enough water is the best treatment for fluid retention.

When the body gets less water, it perceives this as a threat to

survival and begins to hold on to every drop. Water is stored

in extra cellular spaces (outside the cell). This shows up as

swollen feet, legs and hands.

Diuretics offer a temporary solution at best. They force out

stored water along with some essential nutrients. Again, the

body perceives a treat and will replace the lost water at the

first opportunity. Thus, the condition quickly returns.

The best way to overcome the problem of water retention is to

give your body what it needs -- plenty of water. Only then will

stored water be released.

If you have a constant problem with water retention, excess salt

may be to blame. Your body will tolerate sodium only in a

certain concentration. The more salt you eat the more water

your system retains to dilute it.

But getting rid of unneeded salt is easy -- just drink more

water. As it's forced through the kidneys it takes away excess

sodium.

The overweight person needs more water than a thin one. Larger

people have larger metabolic loads. Since we know that water is

the key to fat metabolism, it follows that the over weight

person needs more water.

Water helps to maintain proper muscle tone by giving muscles

their natural ability to contract and by preventing dehydration.

It also helps to prevent the sagging skin that usually follows

weigh loss -- shrinking cells are buoyed by water which plumps

the skin and leaves it clear, healthy and resilient.

Water helps rid the body of waste. During weight loss, the body

has a lot more waste to get rid of -- all that metabolized fat

must be shed. Again, adequate water helps flush out the waste.

Water can help relieve constipation. When the body gets too

little water, it siphons what it needs from internal sources.

The colon is one primary source. Result? Constipation. But

when a person drinks enough water, normal bowel function usually

returns.

So far, we've discovered some remarkable truths about water and

weight loss:

* The body will not function properly without enough

water and can't metabolize stored fat efficiently.

* Retained water shows up as excess weight.

* To get rid of excess water you must drink more water.

* Drinking water is essential to weight loss.

How much water is enough? On the average, a person should drink

8-ounce glasses every day. That's about 2 quarts. However, the

overweight person needs one additional glass for every 25 pounds

of excess weight. The amount you drink also should be increased

if you exercise briskly or if the weather is hot and dry.

Water should preferably be cold. It's absorbed into the system

more quickly than warm water. And some evidence suggests that

drinking cold water can actually help burn calories. To

utilize water most efficiently during weight loss, follow this

schedule:

Morning: 1 quart consumed over a 30-minute period.

Noon: 1 quart consumed over a 30-minute period.

Evening: 1 quart consumed between five and six o'clock.

When the body gets the water it needs to function optimally,

it's fluids are perfectly balanced. When this happens, you have

reached the "breakthrough point." What does this mean?

* Endocrine-gland function improves.

* Fluid retention is alleviated as stored water is lost.

* More fat is used as fuel because the liver is free to

metabolize stored fat.

* Natural thirst returns.

* There is a loss of hunger almost over night.

If you stop drinking enough water, your body fluids will be

thrown out of balance again, and you may experience fluid

retention, unexplained weight gain and loss of thirst. To

remedy the situation you'll have to go back and force another

"breakthrough."

Juicing Anyone?

I have had a juicer for about 5 years now and I think the motor is about to wear out. I looked at some juicers at christmas and ended up deciding to wait. The one I have still has life in it but it tends to leave just a little more pulp than it used to. I like to juice but it seems to take more time than making a dinner. Now that is most likely all in my head as all I need to do is cut up fruits and vegetables. I know it takes more time to make a full course dinner. Must be a mental block.

I do feel better when I drink juice. It fills me up and you can get several, maybe even 4-5 servings of veggies in in once glass. I went shopping last week at Cosco and found some premade juices there. Bolthouse Farms is the brand name. The juice is 100% natural and so easier that juicing your own or it would work when you are in a rush. I bought the Green Goodness and the Carrot Juice. The carrot is wonderful. I love it. The Green Goodness is good but it is a little thick. And so pea green in color. I took some to work and people were horrified at the way it looked. I had no takers when I offered some to my fellow co-workers.

I still am a fan of my tried and true juice recipes that I make myself. Here is my favorite. This juice combination turns a beautiful sunset/purple color and it does taste really good. Good as a liver cleanser.

1 fresh large beet
1 large apple
3-4 large carrots
1 large handful parsley

Juice it all together and drink!

I have had a few juicing disasters. Somehow I do not have the knack for juicing oranges with the rind. It always turns out too bitter. So I tend to stick to store bought orange juice. (Minutemade) The recipe best book that I have used the most is the Power of Juicing. It has recipes for just about every ailment you could have. And the recipes really do help with what ever ailment you have. I try to have one "juice" meal a day. It makes a world of difference in how hungry I feel during the day.

Today's Confession

Forgive me father for I have sinned.


  • Today I drank a Coke-two actually- and I did not drink any water today. Maybe 1/2 a glass but nowhere near the 8 I should have drank.
  • Today I did not excersize at all. I was not motivated.
  • In addition to the Coke, I went to Starbucks and had a mocha frappucino. I had not had one in 5 months and the craving overtook me. I enjoyed it.
  • Worst of all, I ate a cupcake with my lunch of carrot juice and salad.
Does it matter at all that the carrot juice and salad will cancel out the fat and calories from the cupcake? I will begin again tomorrow, new and will avoid those sinful things.

Sweet absolution!

Star Jones: Beached Whale No More

Star Jones has definitely lost the weight. She did have surgery to do it. She did it the easy way instead of sweating it off, like Oprah did. I guess it is all good as long as it comes off. Let's hope it stays off. The only thing I have noticed now when I see her is that she has gotten less attractive. Not because she is no longer fat. Just because she is not a very pretty woman. I saw her on Dr. Phil a few weeks ago and she was downright ugly that day. Tore up from the floor up and beat down with the ugly stick. All that make up and that weave did nothing for her that day. Her eyes looked very almond shaped and dead..almost like a mannequin's eyes. Bulging they were. She normally looks "okay" but that day was a very "bad looking" day for her. My fear? That her weight will come back once that gay..I mean "straight" husband leaves her. Move over Terry, make room for Star! It will only be a matter of time. He will leave the "down low" behind and come out of the closet!

My Clotheshorse


This is my clotheshorse!

According to the dictionary a clotheshorse is: "A frame on which clothes are hung to dry or air."
Well, that is what my Schwinn Airdyne Exercise Bike is, a clotheshorse. Unfortunately. I have had it for about 5 years and it was very expensive. I have used it but as you can guess not in the proper fashion and certainly not enough for the "RIGHT" reason. It sits in my living room occupying a very large space.

The purpose of it living in the living room was to give me the motivation to ride it when I was watching t.v. That has worked but it simply has not been done enough. This winter it has held just about all my winter coats and sweaters at one time or another. And let's not forget the sweatshirts. It can hold alot of winter clothes at one time if you drape them just right. Do I have a coat closet? Yes, but the Schwinn Airdyne Exercise Bike is more handy.



As a bike it is great when I use it. I will be huffing, puffing and sweating in no time. On yesterday the clotheshorse went into retirement-- as a clotheshorse. I have cleared it of all winter sweaters and dusted it off. It now sits ready to use whenever I watch t.v. I plan to become re-aquainted with that Schwinn Airdyne Exercise Bike. I need to get all the money I paid out for it, out of it. If you have fitness equipment around your house still in its' halloween costume as a clotheshorse, get rid of that costume. Brush it off, use it. Spring and swimsuit weather is soon approaching. Git to bikin!

After looking on line, the recumbant bike seems to be all the rage now. It is what they have at my gym. No way will I get one of these until my old Schwinn has been put out to pasture!

Billy Banks Boot Camp DVD

I was wondering thru Walmart last week and saw a new Billy Blank DVD that I did not have. I have just about all the others. They are all good. You will definitely get a work out with him. I do recommend his collection. I did not buy this one yet but want to.

Shangri-La Diet

A Berkeley professor has a dream diet he calls Shangri-La. He says it's as simple as drinking sugar water. Diet commercials. Diet pills. Diet books. For millions of Americans, the search for the silver bullet to battle the bulge is a constant one.

Berkeley psychology professor Seth Roberts says he tried several diets for years but never found a lasting solution.

He said, "I drank a lot of water and lost weight, I ate less processed food and lost weight, I ate food with low glycemic index and lost weight and I ate sushi and lost weight."

Roberts' quest eventually led him to the Shangri La Diet - a diet that he has developed over 15 years of self-experimentation.

" I take one tablespoon a day of extra virgin olive oil. That's for me for other people it could different. And when I'm in cafe I have a cup of hot sugar water."

That's right! A diet as simple as taking tablespoons of oil and drinking glasses of sugar water in between meals to quell the urge to continue to eat.

"When I discovered the effects of the sugar in the water I lost 35 pounds in 3 months."

Roberts who weighed 200 pounds eventually lost 40 pounds. And his friend, Michael, lost 80 pounds in 6 months.

Roberts calls it the Shangri-La Diet, and suggests it works by suppressing a basic "caveman" instinct from days when access to food was intermittent. The diet tricks the body from thinking it needs to eat every last bit of food before an impending famine.

"It isn't really a fad diet," said Stephen Dubner, co-author of the "Freakonomics" column in The New York Times. "It's more about understanding the theory behind eating. It's not about denying things. It ultimately leads to lessening the amount you eat. In effect, by taking this canola oil and this sugar water, you're tricking your metabolism."

Dubner and his co-author, Steven Levitt, tried the diet themselves. Dubner said he lost 5 to 6 pounds over the course of a couple weeks, and had a "shockingly" easy time skipping lunch. Dubner said he wasn't really trying to diet, but Roberts, who began the diet at 200 pounds, eventually lost 40 pounds. His friend lost 80 pounds in six months on the Shangri-La Diet.

"This is an incredibly simple and elegant way of understanding what appetite is about," Dubner said. "The novelty of this is trying to persuade you to be more disciplined and tricking the system."
